Roasted Sausage and Potatoes

With sausage, potatoes, & veggies in a tangy dressing, this sheet pan dinner is a tasty weeknight dinner.

Ingredients :

  • 1 pound baby potatoes or yukon gold or red potatoes, cut into 1" pieces
  • 1 pound smoked sausage cut in ½" slices
  • 1 red bell pepper or green, diced
  • ½ medium zucchini cut in ½" slices
  • ½ red onion cut in ½" pieces
  • 2 tablespoons olive oil
  • 1 ½ teaspoons red wine vinegar
  • ½ teaspoon Dijon mustard
  • ½ teaspoon dried basil
  • ½ teaspoon salt or to taste
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • 1 clove garlic minced

Directions :

  • Preheat oven to 425°F.
  • Combine the dressing ingredients in a small bowl.
  • Toss potatoes with 1 tablespoon of the dressing mix.
  • Bake 20 minutes. Meanwhile, toss remaining ingredients with the remaining dressing.
  • Add to the pan and mix well. Increase heat to 450°F and roast an additional 15 to 20 minutes or until vegetables are tender. Broil for 2 minutes or until golden.
