With sausage, potatoes, & veggies in a tangy dressing, this sheet pan dinner is a tasty weeknight dinner.
Ingredients :
1 pound baby potatoes or yukon gold or red potatoes, cut into 1" pieces
1 pound smoked sausage cut in ½" slices
1 red bell pepper or green, diced
½ medium zucchini cut in ½" slices
½ red onion cut in ½" pieces
2 tablespoons olive oil
1 ½ teaspoons red wine vinegar
½ teaspoon Dijon mustard
½ teaspoon dried basil
½ teaspoon salt or to taste
¼ teaspoon red pepper flakes
¼ teaspoon black pepper
1 clove garlic minced
Directions :
Preheat oven to 425°F.
Combine the dressing ingredients in a small bowl.
Toss potatoes with 1 tablespoon of the dressing mix.
Bake 20 minutes. Meanwhile, toss remaining ingredients with the remaining dressing.
Add to the pan and mix well. Increase heat to 450°F and roast an additional 15 to 20 minutes or until vegetables are tender. Broil for 2 minutes or until golden.
