Pineapple Casserole

This easy recipe is has lots of pineapple and cheddar cheese topped with a buttery Ritz cracker crust and baked until golden and bubbly.

Ingredients :

  • 20 ounces crushed pineapple drained, 1 can
  • 20 ounces pineapple chunks drained, 1 can
  • 2 cups shredded cheddar cheese
  • ½ cup light brown sugar
  • ⅓ cup all-purpose flour
  • Topping
  • ½ cup salted butter melted
  • 40 Ritz Crackers crushed

Directions :

  • Preheat oven to 350°F.
  • In a large bowl, combine the pineapple, cheese, sugar, and flour. Transfer the mixture to a 2 QT baking dish.
  • In a medium bowl, mix the melted butter and crushed crackers until evenly coated.
  • Sprinkle the crackers over the top of the pineapple mixture and bake for 30 minutes. Serve warm.
