Mediterranean Farro Salad

This Farro Salad is crisp & colorful. Full of fresh veggies and hearty farro, this salad is sure to be a family favorite!

Ingredients :

  • ¾ cup farro uncooked
  • 2 cups grape tomatoes halved
  • 2 cups English cucumber diced
  • 1 cup chopped fresh spinach
  • ⅓ cup oil packed sundried tomatoes drained
  • ⅓ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion thinly sliced
  • 2 tablespoon chopped fresh parsley
  • ¼ cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • salt and black pepper to taste

Directions :

  • Place farro in a large pot of salted water. Bring to a boil, reduce heat to a simmer and cook until farro is tender, about 14-16 minutes. Drain well and rinse with cold water.
  • While farro is cooking, prepare vegetables. Place all dressing ingredients in jar and shake well.
  • Combine cooled farro, dressing, and vegetables in a bowl. Toss well and refrigerate for 1 hour.
  • Garnish with feta cheese and serve chilled.
