Frito Corn Salad combines sweet corn, fresh bell peppers, spicy jalapenos and of course crunchy Fritos all in a creamy dressing. This is the perfect potluck side dish or appetizer dip!
Ingredients :
3 cups corn kernels fresh off the cob, or two 12-14 ounce cans of corn, drained
½ red bell pepper diced ¼-inch
½ green bell pepper diced ¼-inch
½ red onion diced ¼-inch
4 ounces diced jalapeños drained, or 4 oz mild green chiles drained
⅔ cup mayonnaise
2 teaspoons chili powder
1 ½ cups shredded cheddar cheese
5 ounces Fritos chips
Directions :
Combine all ingredients except Fritos in a large bowl and mix well.
