Easy Alphabet Soup

This classically simple Alphabet Soup Recipe is a favorite for kids, but hearty (and delicious) enough for everyone! Nothing is more comforting than a cozy bowl of homemade soup. This fun version is perfect for dipping bread or crumbling crackers. It’s great for those cool fall evenings and reheats well for lunches.

Ingredients :

  • 1 carrot sliced
  • 1 rib celery sliced
  • ½ onion diced
  • 2 cloves garlic minced
  • 5 cups beef broth reduced sodium
  • 1 cup water
  • 14 ounces canned diced tomatoes with juices
  • 1 potato diced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 cup alphabet noodles uncooked

Directions :

  • In a large pot over medium heat, saute carrots, celery, onion, and garlic until onion begins to soften.
  • Add broth, water, tomatoes, tomato paste, potato, and seasonings. Bring to a boil and turn down to a simmer for 15 minutes.
  • Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente.
