For a unique (and quick) pasta dish, we love this bright & creamy avocado pasta sauce.
This recipe is similar to pesto in that it’s a blended sauce with fresh ingredients and requires no cooking. It’s rich, creamy and full of avocado flavor.
Ingredients :
12 ounces long pasta such as angel hair or spaghetti
2 cloves garlic minced
2 avocados ripe
2 tablespoons fresh basil leaves
2 tablespoons chopped fresh parsley
2 tablespoons heavy whipping cream do not substitute milk
1 tablespoon olive oil
2 teaspoons fresh lemon juice
½ teaspoon salt
3 tablespoons grated Parmesan cheese divided, more for garnish
fresh herbs and chili flakes for garnish, optional
Directions :
Combine garlic, avocados, basil, parsley, heavy cream, olive oil, lemon juice, salt, and 2 tablespoons parmesan cheese in a food processor.
Pulse the mixture until it is smooth and creamy.
Cook pasta al dente according to package directions. Drain well and reserve pasta water, do not rinse.
While pasta is hot, toss with avocado sauce adding pasta water as needed to thin out the sauce.
Garnish with remaining parmesan cheese and additional herbs if desired.
